It's that time of year.........PUMPKIN everything!
A favorite in our house this time of year is Pumpkin Pancakes.
I found an awesome recipe @ allrecipes.com
You can of course change the recipe to fit your taste buds. :-)
Ingredients:
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons white vinegar
2 cups all purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
In a mixing bowl combine milk, pumpkin, egg, oil and vinegar. Stir well. Add all dry ingredients a little at a time until well mixed. Pour onto griddle or pan. Cook until done.
I make my pancakes on a griddle to get them done faster, but you can use any method.
This recipe is so good! You'll think you were eating pumpkin bread! Melt in your mouth goodness!
